I’m officially registered as a blogger for the Dallas GFAF Expo! I’m beyond excited. This is my first event as a diagnosed Celiac!
For those just tuning in, I became extremely ill after having my second child in the Spring/Summer of 2014. 6 months later I had lost 30 pounds, could barely eat without getting sick and was emaciated. After an endoscopy in December of 2014, I was diagnosed with Celiac Disease. While CD required a full lifestyle change and certainly has its challenges, it’s been a great change for me as I’m healthier now than ever.
This Expo is a big deal for me. I am always looking for safe foods, ingredients and safe places to eat. The more educated I am, the more I can venture out and try new things without my health being compromised. Just because I’m a Celiac doesn’t mean I can’t enjoy the same things “normal” folk can! There’s always an alternative.
Since diagnosis, I have be consistently gluten free except when accidentally exposed while eating out. Because of this, I try to educate restaurants and servers on the importance of avoiding cross contamination and how it affects someone like myself. Therefore, I am also a big supporter and contributor of the app/website, Find me Gluten Free. (<—They host the Expos!)

Having most of these companies at the Expo allows me to try products before buying and sharing on social media and support groups, in addition to educating myself.
